Rice Noodles with Chicken and Vegetables

This Rice Noodle recipe is a simple, delicious, and healthy meal, ready in less than 30 min. A perfect weeknight meal.




I was doing my grocery shopping for the week and for the blog in Chandarana when I ended up in the Asian food aisle . I noticed the rice noodles first and I was intrigued... not that I had never seen them before but I've always wanted to try them & I have a lot of saved pins on my Pinterest with so many ideas of how to prepare them. So I decided why not, l’m always open to new ideas when it comes to cooking and always willing to try different dishes.


My noodle bowl has rice noodles, chicken breasts, carrots, broccoli, cherry tomatoes, jalapenos and cucumbers. I marinated my chicken with black pepper, white pepper, salt, cayenne pepper, and paprika. I used vegetable oil and soy sauce for the vegetable stir fry.


My recipe was very much inspired by Munchkin Time because the recipe gave me some sort of an idea of what ingredients to use, even though I didn't use all the ingredients that she mentioned. You can also check out their recipe, it's pretty dope.


Now, let's cook :)


Servings: 2

Prep time: 7 minutes

Cook time: 20 minutes


You will need: 150g rice noodles

2 chicken breasts

1/2 tsp each of black pepper, white pepper, cayenne pepper, salt and paprika

2 large carrots

1 large broccoli head

1 cup cherry tomatoes

1 cucumber

1 jalapeno pepper


Procedure:

For the rice noodles, see package instructions. I soaked mine in hot water then stir fried them.


Cut your chicken breasts into strips then marinate with the all the spice mentioned above

Fry or oven-bake the chicken strips with vegetable oil until golden brown and lightly crisp.


Use a peeler to peel the carrots as seen in the photo or chop them into tiny strips.

Chop the broccoli, cherry tomatoes, jalapeno and cucumber.


Separately, stir fry the carrots and broccoli with vegetable oil and soy sauce. Each should not take more than 5 minutes.

Cherry tomatoes and the jalapeno can be fried together.


Lay out the food on your plate and enjoy :)
