Your Personalized Salad Bowl

Hello, hi!!! It feels good to be back into blogging, I had missed writing on my blog and I had missed you guys so much 😢


The past few months had been a bit too hectic for me that I decided to take a break from blogging. I was touched when most of you guys reached out to me with all your love, kind words, and support ✨

Now that's out of the way, can we get to this salad bowl finally. I have been dreaming about this post; I have had quite a number of you reach out for salad recipes and after exhausting all my resources (my salad recipes) I figured I could just send out my go-to ingredients for my salads and what I would just do is pair a few ingredients for you (especially condiments for salads dressing). This is an old trick in the book but hey, someone, somewhere is reading this and learning for this for the first time.


Item Checklist for your next grocery shopping escapades (I don't buy these items all at once) - avocado, onions, lettuce, spinach, carrots, cucumbers, peppers, sweet corn, tomatoes/cherry tomatoes, apples, oranges, pasta, rice, croutons, olives, sun-dried tomatoes, pickles, almonds, pine nuts, chia seeds, pumpkin seeds, black beans, lentils, quinoa, couscous, honey, balsamic vinegar, olive oil, mayonnaise, chili sauce, tomato sauce, mixed herbs, yogurt, & feta cheese.

This salad bowl is light, healthy and simple, it's perfect for potlucks, and picnics. I tried to be as neat as possible assembling this bowl. I prepared this salad with some couscous, sweet corn, and popular add-ins like tomatoes, cucumbers, lettuce, pumpkin seeds, and feta cheese. It’s packed with protein, each bite enhances the richness and satisfaction of the salad. The salad dressing is a great simple dressing that’s versatile for most salads and really complements the flavors of the salad bowl! I love the sweetness from the golden syrup and richness of lemon juice flavors.




Have I said enough? I probably have, let's get to our very first salad bowl, there's most defs more to come 😃



Prep time: 20 minutes

Servings: 3


Ingredients:



For Salad Bowl:

1 Avocado, sliced

2 heaped cups Baby Cucumber, diced

1/2 cup Couscous

3/4 cup Feta Cheese cubes

1 Lettuce head, separate the lettuce leaves

1/2 Red Onion, sliced

2 tablespoons Pumpkin Seeds

1 cup Sweet Corn

6-8 Cherry Tomatoes, halved

Salt & Pepper to taste


For Salad Dressing:

1 tablespoon Lemon Juice

2 tablespoons Mayonnaise

1 teaspoon Golden/Marple Syrup

1 teaspoon Mixed Herbs

1 teaspoon Tomato Sauce

2 tablespoons Olive Oil

Salt & Pepper to taste












Procedure:


Couscous,

Let it sit in 1/2 a cup of hot water with, herbs, spices & salt, for a few minutes to absorb the liquid. Fluff with a fork, and place in a large bowl. Follow the package directions for the amount of water to use and the time to set the couscous in the water.


Sweetcorn,

Let the sweetcorn sit in hot water for 2 minutes then place in the large bowl.


For the whole salad,

Neatly assemble all the ingredients for the salad into the large bowl.


For the dressing,

Mix together all the ingredients - lemon juice, mayonnaise, golden syrup, mixed herbs, tomato sauce, olive oil, salt and pepper.


Pour the dressing over, and serve.




Notes:

Storage: Store any leftovers in an airtight container. They will last about 2 days in the fridge.
