Garbanzo Beans (Chickpeas) Falafel

Falafels kept showing up on my Instagram newsfeed the other day so I knew this was a sign from the universe telling me to make my own. This Homemade Falafel recipe is so easy to make yet loaded with lots of flavors! All you need is a can of chickpeas, some seasonings, and a food processor.
Falafel makes for a great wrap between pita bread or as a salad topper just as seen in my picture. Not only do these falafels look gorgeous, they also taste delicious! So much scrumptiousness in one picture! What is Falafel? Falafel is made from ground chickpeas (aka garbanzo beans) or fava beans, lots of fresh herbs, spices, onions all ground up to make a dough. The dough is then formed into patties then pan-fried (or you can make them into balls and deep fry it).
It is commonly found at food trucks, and in some Middle Eastern restaurants.
Now, let's get to the recipe!

Prep Time: 15 minutes
Servings: 8
Ingredients:
2 cans Chickpeas
1 cup Bread Crumbs
1 cup Red Onion (chopped)
1/2 cup Chives/ 2 cloves Ginger
1/4 cup Parsley
2 tsp Cumin
1 tsp Salt
1 tsp Black Pepper
3 tbsp water
1/4 cup Vegetable Oil
Procedure:
Drain and rinse the can of chickpeas. Add them to a food processor with all the ingredients besides the oil.
Process the mixture until smooth. Refrigerate for 3 hours.
Scoop out 2 tablespoon round balls and slightly flatten to form patties. If the mixture is not stiff enough to hold together, stir in a little more bread crumbs.
Add vegetable oil to a skillet and set over medium-high heat.
When the oil is hot add the falafel patties to the oil and cook until golden brown, flip the falafel and cook until all sides are golden brown.
Remove from the oil and place onto a paper towel-lined plate.
Serve warm.

Notes:
Add more bread crumbs if they dough starts to crumble.
