Protein-packed Chickpea Salad

It must have crossed your mind a little bit and noticed that I have suddenly grown a satisfying love for chickpeas AKA Garbanzo Beans. They are so versatile, you can come up with a number of dishes with them. I recently share my falafel recipe, make sure to check it out.

I used canned drained chickpeas so these are store-bought. You easily find them in any supermarket in the canned-vegetable aisle and they relatively go for a good price.





Paprika-Coated Chickpea Salad loaded with crisp cucumbers, juicy tomatoes, creamy avocado, onions, and chickpeas, or garbanzo beans. Fresh, healthy, and protein-packed!


Benefits of Chickpeas

Chickpeas are very healthy food and are a perfect way to add plant-based protein to salads.

  • Chickpeas add great protein and fiber.

  • They are also rich in iron, zinc, phosphorus and B vitamins

  • Chickpeas help with blood sugar control,* (the starch in chickpeas is digested slowly resulting in stabilized sugar levels)


Let's get to the recipe!


Prep time: 10 minutes

Servings: 1


Ingredients:

  • 1 teaspoon paprika

  • 1 teaspoon oil

  • Salt & Pepper

  • 1 cup canned chickpeas

  • Avocado slices

  • 1 cup cherry tomatoes

  • 1 cup cucumber slices

  • 1/2 cup red onion slices

  • 1/4 cup ranch dressing


Procedure:

  1. Drain and rinse chickpeas.

  2. Add oil, paprika, salt & pepper to a pan, then cook on low heat. Add the rinsed chickpeas and combine until the chickpeas are well coated.

  3. In a bowl, add the chickpeas, avocado slices, cherry tomatoes, cucumber, lettuce, and red onions.

  4. Add ranch dressing and mix until the salad is well combined.

  5. Serve to your plate and enjoy :)
