Pork Belly

Pork Belly is absolutely one of my favourite meats. It is incredible tender with a crispy and tangy exterior.

I coated my pork belly with a delicious marinade then cooked until I reached the dark brown, shiny stage. It has such a wonderful intense flavour that takes whatever you have made to a whole new level.


It absolutely tastes amaziiing!


Let's get to the recipe...


Prep time: 15 minutes

Cook time: 1hr 30 min

Servings: 4


Ingredients:


1kg pork belly


For the marinade:

1/3 cup chives, chopped

1 tbsp thyme

1 tbsp apple cider vinegar

2 tsp brown sugar

2 tsp soy sauce

1 tsp fruit chutney

2 tbsp vegetable/olive oil

salt & pepper to taste

1/2 tbsp butter for grilling


Procedure:

In a huge zip lock bag/ plastic bag, mix together the chives, thyme, apple cider vinegar, brown sugar, soy sauce, fruit chutney, oil, salt & pepper to make the marinade.



Add the pork belly to the plastic bag and let it marinate in the refrigerator for 4 - 6 hours over overnight.



Preheat oven to 230 degrees C.


Melt butter in the microwave then pour in an oven skillet/tray. Add the pork belly and bake for 60 minutes then grill for another 30 minutes until crisped and golden brown. Check on the pork every 20 minutes.




When the pork belly is cooked, slice to your desired thickness and serve immediately with rice, potatoes or butternut squash with some vegetables.
