Masala Chips

Masala chips are a unique Kenyan dish that consists of french fries dipped in a very delicious sauce. The sauce or paste is made of tomatoes, onions and different spices.

I love my french fires drenched in this sauce.
Prep time: 7 minutes
Cook time: 23 minutes
Servings: 3
You will need:
7 medium-sized potatoes, cut into chips
2 cups vegetable oil
1 large onion
1 large tomato
2 tablespoons tomato paste
1 teaspoon turmeric
1 teaspoon curry powder
1 teaspoon ginger & garlic clove minced
1/2 teaspoon cayenne pepper
2 teaspoons garam masala
Cilantro, chopped for garnishing
Procedure:
Heat the vegetable oil in a deep pan or a deep fryer and fry the potato chips until crispy
Heat a tablespoon of vegetable oil, add onions. Cook the onions for a minute then add the tomatoes and tomato paste. Cook the tomatoes for another minute then add the turmeric, curry, ginger & garlic, cayenne and garam masala.
Cook the ingredients until they are well combined and starting to thicken. Add a splash of water to make the sauce more
Turn the heat to low, and throw in the chips. Toss them around so that the sauce/masala covers them properly
Turn off the heat, garnish with cilantro and serve. Enjoy! :)
