Mango Smoothie Bowl

Frozen fruit is the key to a quick smoothie with bright, & vibrant flavours. I have started to keep a steady supply of frozen fruits in my freezer for this purpose. This recipe uses a combination of frozen bananas and frozen mangoes to thicken the smoothie. The addition of coconut milk or any other milk lends a creamy texture and a rich flavour.

The smoothie is dense enough to support a range of toppings, which takes it from being a grab-and-go drink to a complete breakfast. The liquid to solid ratio is different than a regular smoothie; here, you add a little less liquid so the blended frozen fruit turns out very thick.

They looked easy enough to make, and the idea of getting to arrange all the toppings made my inner child very, very happy. You can also carry the smoothie to work in a container, make sure to put it in the fridge as soon as you get work & have it whenever as a healthy snack or lunch :)
You can enjoy it plain, but to me, toppings always add a little extra that I really enjoy. You should know I had a tough time trying to break open the coconut for my flakes but it was worth it; fresh creamy coconut flakes... THE BEST! Cook time: 5 minutes
What you need:
2 large ripe bananas & 2 large mangoes, cut into chunks and frozen
1/3 cup coconut milk (or milk of your choice)
Toppings (choose any of the following)
Bananas, sliced
Berries
Chia/Pumpkin/Sunflower seeds
Coconut flakes
Granola/ Oats
Kiwi fruit
Mangoes
(Any fruit really)
Procedure:
In a blender or food processor, blend the frozen bananas,mangoes & milk until smooth.
Spoon into a bowl and top with fresh fruits and/or seeds.
Enjoy!
