Lentil Soup

Creamy, warming, spicy & delicious!

Ingredients:
1 tbsp butter 1 diced onion diced 2 minced garlic cloves 1 cup lentils 1 tsp curry powder 1 tsp chilli powder 1 tsp salt 1 tsp pepper 1 1/2 cups vegetable stock Parsley Yoghurt or cream to swirl on top
Procedure:
Boil the lentils until softened. Heat the butter in a pot and fry the onions and garlic for 5 minutes until softened.

Mix the curry powder, chilli powder, salt & pepper, curly parsley and lentils.

Add the mixture in the pot with onions, add the vegetable stock and cook for a further 10 minutes.
Blend in a high-powered blender until smooth.

Serve with some fresh chopped parsley and a swirl of yoghurt, if desired. Enjoy!
