Fajita Chicken Kebabs

Juicy, moist and savory chicken kebab seasoned fajita-style with lime, garlic, chili, and cumin. Absolutely delicious and a crowd pleaser.

It is important to keep the chicken skewers moist, tender and juicy. For the best results, remember to brush the chicken generously with oil or the remaining marinade while grilling.

What you need:
2 boneless, skinless chicken breasts
2 tablespoons vegetable oil
Juice and zest of 2 small limes/lemon
1 tablespoon paprika
1 1/2 teaspoons ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1 clove garlic, chopped
1 large red bell pepper
1 large green bell pepper
1 large yellow bell pepper
1 large red onion
Salsa or guacamole, optional for serving
Procedure:
Cut the chicken into bite-sized pieces. Place in a bowl
Whisk together the oil, lime juice and zest, chili powder, cumin, garlic, paprika, and salt. Pour over the chicken, and gently coat the chicken with the marinade. Refrigerate for 30 minutes or overnight

If using wooden skewers, soak the skewers in water for at least 20 minutes prior to use
Heat your grill to medium-high. Cut the bell peppers and onion into 3/4-inch chunks, then thread onto skewers with the marinated chicken pieces, alternating the chicken with the vegetables
Place the kebabs on the grill, cover, and let cook until the chicken is fully cooked for about 8 to 10 minutes

Serve warm, garnished with salsa or guacamole as desired
