Beef Stew with Potato Gratin

This hearty beef stew will be most welcome at the table. It will become one of your favorites! This dish is stuffed with a delicious beef stew and combines potatoes with mozzarella cheese to create the ultimate winter comfort food.


It is so easy to make, every step is worth it!


Prep time: 15 minutes

Cook time: 45 minutes

Servings: 4


Ingredients:


For the potato gratin

6 large potatoes, peeled and cut into slightly thick rounds

1 tablespoon melted butter/vegetable oil

3 tablespoons mozzarella/parmesan cheese, finely grated

salt, to taste


For the beef stew

2 tablespoons vegetable oil

1 kg beef shin, cut into rectangle pieces

1 large onion, diced

2 carrots, chopped

1 garlic clove, minced

2 tablespoons tomato paste

1 tablespoon curry powder, black pepper, fruit chutney & paprika

1/2 teaspoon sugar

1 1/2 cups beef stock

1/2 tablespoon salt, to taste


Procedure:

Heat the 2 tablespoons of vegetable oil in a large pot. Add the beef and cook for 15-20 minutes or until it is brown.


Add the onion, carrots, and garlic. Cook for another 5 minutes then add the tomato paste, curry powder, black pepper, fruit chutney and paprika. Cook for 7 minutes then remove the pot from the heat and place the stew in a baking tray.


Preheat oven at 180 degrees C.


Boil the potatoes in salted water for 5 minutes. Drain thoroughly and drizzle the potatoes with the melted butter or oil.


Lay the potatoes over the meat filling, overlapping slightly. Scatter over the cheese and grill for several minutes until the top is bubbling and the potatoes are golden.




Serve with steamed green vegetables and enjoy!
