Asian Chicken Lettuce Wraps

A flavourful marinade of soy sauce, honey, ginger, garlic, spring onion, salt & pepper made this chicken absolutely juicy and delicious! Wrapped in crunchy lettuce leaves and topped with sesame seeds, toasted pecans, diced baby cucumber, spring onion and an amazing sauce. These Chicken Lettuce Wraps are a perfect light but filling lunch or dinner.



Lettuce wraps are a perfect way to eat healthy plus they are so easy to put together – all you need is the pan-fried chicken, sesame seeds, chopped toasted pecans, diced baby cucumbers and spring onion. Ooh and the sauce? A delicious tangy sauce made with soy sauce, peanut oil, apple cider vinegar, sugar and some sesame seeds. This is by-far my most favourite flavour combination.

Cook time: 15 minutes

Servings: 3


Ingredients

1 tbsp butter

200g boneless chicken, cut into strips

1/2 cup chicken broth

1 large carrot, cut into thin strips

1/2 onion, sliced

1 tsp sesame seeds

For the marinade

1/3 cup spring onions, diced

1/3 cup soy sauce

1 tbsp worcester sauce

1 tbsp honey

1 tbsp peanut oil

Salt & Pepper

For the sauce

4 tbsp soy sauce

2 tsp peanut oil

3 tsp apple cider vinegar

1/2 tsp sugar

1/8 tsp sesame seeds

Toppings

Sesame seeds

Toasted pecans

Baby cucumber, diced

Spring onions, chopped


Procedure

Mix marinade ingredients in a bowl, add the chicken strips then let marinate in the refrigerator for 30 minutes.



Heat the butter in a skillet, add the chicken and stir fry for a few minutes then add the chicken broth. Cook for another 2 minutes.

Add the carrot strips, onion and sesame seeds in the skillet and cook for about 5 minutes.



While the chicken is cooking, prepare the sauce. Pour the soy sauce into a small saucepan and cook over low heat for a minute. Turn off heat, stir in the peanut oil, apple cider vinegar, sugar. Set aside.

To prepare the lettuce wraps, gently peel leaves, wash and pat dry. Lay the chicken in the lettuce leaves, followed by sesame seeds, pecans, cucumber, and spring onion. Top with the sauce.



Serve immediately. Enjoy!
