A Fun Delicious Veggie Meal

All I can say is...simply use what you have to make a yummy veggie meal. Don't limit yourself, make yourself a healthy veggie platter with all the veggies you have in your kitchen. Create a colorful, delicious, healthy vegetable platter!

This is how I usually prepare most of my vegetables on a daily basis,
For zucchini
Cut into 4 slices, lay the slices and grill for 2 to 3 minutes or until marked. Flip and cook for another 3 minutes. Do the same with the chili pepper.
Plantain
Simply peel and slice 2 ripe plantains and fry them in 1 1/2 teaspoons vegetable oil until cooked through and golden on both sides.
Carrots and Beans
Boil 1/2 cup of water, add carrots, and cook for 2 minutes. Add beans and cook for another 2 minutes. Drain the water. Add 3 teaspoons of chicken/beef broth [optional but gives flavor] the and 1 teaspoon of vegetable oil. Let it simmer for 2 minutes uncovered. Drain excess broth and serve.
Avocado - simply peel & slice it up!
All green veggie leaves are welcome!
As I said earlier, use as many vegetables as you like and don't forget grilling is also an option instead of just boiling.
