Happy New Year!!! I am so grateful for this new year and may this new year bring many new opportunities your way to explore every joy of life. I Hope this new year fills your life with happiness and perfect health always, much more success and happiness.

Obviously I have this thing for potatoes because potatoes = food bliss.

I have another masala chips recipe for you made with a special sauce. I made the sauce with onions and a couple of spices, it's overwhelmingly delicious.

Prep time : 20 minutes

Cook time: 35 minutes

Servings : 4

Ingredients For the chips: 4 large potatoes, peeled 4 tsbp vegetable oil 1 1/2 tsp salt For the sauce: 1 tsbp butter/vegetable oil 1 chopped onion 1 tsbp garam-masala 1 tsbp gravy powder 1 tsp garlic powder 1 tsp coriander powder 1 tsbp brown sugar 1/2 tsp cayenne pepper 1 cup water

Procedure:

Preheat oven to 180°CPreheat oven to 180°C. Slice the potatoes into thin slices and place them in a large bowl and cover with water; let soak for 15 minutes. Place 2 tbsp of the oil in a baking tray and grease it until it is evenly coated. Drain the potatoes and pat with a towel until dry. Place the potatoes back in the bowl and coat with the remaining 2 tbsp of oil and salt.

Place the potatoes on the baking tray and bake for 21 minutes, tossing and turning the potatoes every 7 minutes with a spatula. Set your oven to grilling mode and grill the potatoes for another 10 minutes.

For the sauce

Melt the butter in a pot then add the onions and cook the onions for 3 minutes.

Add the remaining ingredients and cook on low heat for 20 minutes until the sauce thickens.

Pour the sauce on to the potatoes and mix well. Throw the potatoes back into the oven and grill for 7 minutes.

Garnish with some Shallots and light Mayonnaise. Enjoy!
