Jamaican Jerk Chicken

Let me give you a taste of the tropics with these Baked Jamaican Jerk Chicken Drumsticks; finger-licking delicious. These easy to make chicken drumsticks are marinated in a sweet, spicy and savory sauce, then baked until fall-off-the-bone tender and crispy. The best recipe for chicken legs baked in the oven.

I served this jerk chicken with some delicious basmati rice and sugar snaps.
Ingredients:
6-8 chicken drumsticks
Marinade:
2 tbsp vegetable oil
1/2 an onion
1 tbsp soy sauce
3 tbsp brown sugar
1 tbsp ginger
1 tbsp garlic powder
1/2 chili
1 tsp cinnamon
1 tsp black pepper
1 tsp thyme
2 tsp salt
1 tsp lemon juice
1 tsp nutmeg
Garnish
Fresh cilantro/celery/parsely leaves
Procedure:
Grind/blend all the spices & herbs in a grinder/blender/food processor.
Pour the marinade in a zip lock bag , add the drumsticks and mix well.

Let the chicken marinate in the refrigerator for 1 to 2 hours.
When ready to cook, remove the chicken from the marinade but reserve the marinade.
Preheat oven to 180 degrees c for 15 minutes.
Place the marinated chicken in your baking tray and let it cook through for 20 minutes.
Baste the remaining marinade on the chicken atleast 6 times after every 5 minutes, turning each side every time until it is ready.
Let the chicken rest for 5 minutes the garnish with celery, parsley or cilantro.

Notes
I transferred my chicken to the top of my grilling tray so that all juices drip off the chicken into the base where I initially cooked it.
