Caramelized Goat Ribs

I carefully attempted these goat ribs using a wide range of flavors. I marinated the ribs with a delicious savory-chilli pesto for a few hours then coated them with a sweet homemade BBQ sauce.

I served the ribs with a nice baked vegetable dish which had some potatoes, carrots, and onions.
Making these ribs took me a while but they were totally worth it. My family absolutely loved them therefore I am sharing this recipe with you so that you and yours can enjoy too.

Prep time: 20 minutes + 2 hours of marinating
Cook time: 2 hours 30 minutes

Ingredients
1kg Goat Ribs
For the pesto
9 garlic cloves
3 tbsp rosemary
2 tbsp parsley
1/2 cup basil leaves
1 tbsp black pepper
1/2 chilli pepper
2 tbsp lemon juice
1 tbsp oil
For the marinade
1 cup pesto
1 tbsp paprika
1 tbsp oregano
1 tsp black pepper
1 tbsp oil
1 full lemon juice
For the vegetables
5 potatoes
3 carrots
1 onion
1 spring onion
Basil leaves, optional
Salt and pepper
Oil
1 tbsp curry powder
1 tbsp cumin powder
1 tsp thyme
1 cup water
For the BBQ sauce
2 tbsp soy sauce
1 tbsp worcester sauce
1 tsp apple cider vinegar
1 tsp paprika
1 tsp cumin powder
1/3 cup sugar
3/4 cup tomato sauce
1 tsp oil
Procedure:
For the pesto
Grind all ingredients in a grinder or food processor until well blended and a thick green paste forms. Set aside.

For the ribs
Marinate the ribs with the pesto, paprika, oregano, oil, orange juice, salt and pepper. Refrigerate for 2 hours.

Preheat over to 200°c for 15 minutes.
Lay out the ribs in your greased baking tray and grill for 2 hours or until meat is tender

Take the meat out of the oven, place in plate, covered and set aside.

For the vegetables
Chop all the vegetables, lay them in the greased baking tray used for the ribs. Sprinkle some oil, salt and pepper and bake at 200°c for 15 minutes.

Mix the curry,cumin and water in a cup then pour in the potatoes and bake for another 15 minutes.

BBQ sauce
Mix all ingredients until well blended, and rub the sauce onto the grilled ribs with a pastry brush.
Back to the ribs
Place the BBQ ribs on top of the vegetable platter and put them back in the oven and grill for just 5 minutes. You can also add some tomato slices on top, this is optional.

Take the dish out of the oven and serve. Enjoy
